Ingredients:
- 1 cup butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup sweetened shredded coconut
- 1/2 cup jelly beans or chocolate eggs
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Stir in the vanilla extract
Gradually add the all-purpose flour to the butter mixture, mixing until well combined
Scoop tablespoon-sized portions of dough and roll them into balls
Place the dough balls onto the prepared baking sheet, leaving some space between each
Use your thumb or the back of a teaspoon to create a small indentation in the center of each dough ball
Bake in the preheated oven for about 10-12 minutes or until the cookies are golden around the edges
While the cookies are still warm, melt the semisweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth and melted
Carefully spoon a small amount of melted chocolate into the center of each cookie
Press sweetened shredded coconut onto the melted chocolate on each cookie to resemble a birds nest
Place jelly beans or chocolate eggs in the center of each coconut nest
Allow the chocolate to set before serving or transferring to a wire rack to cool completely
