Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup orange juice
- 1/4 cup low-sodium soy sauce or tamari for gluten-free
- 2 tablespoons honey or preferred low-carb sweetener
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions for garnish optional
Instructions:
Season chicken breasts with salt and pepper
In a small bowl, whisk together orange juice, soy sauce, honey, garlic, and ginger
Heat olive oil in a skillet over medium-high heat
Brown chicken breasts on both sides, about 2-3 minutes per side
Transfer chicken breasts to the slow cooker
Pour the orange sauce over the chicken
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is cooked through and tender
Once done, remove chicken from slow cooker and shred using two forks
Optional: If desired, thicken the sauce by transferring it to a saucepan and simmering over medium heat until it reaches the desired consistency
Pour the thickened sauce over the shredded chicken
Garnish with sesame seeds and sliced green onions, if using
Serve hot and enjoy
