Ingredients:
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup coconut oil melted
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- For the filling:
- 1/2 cup cashews soaked
- 2 tbsp coconut cream
- 2 tbsp honey
- 1/2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, combine almond flour, cocoa powder, melted coconut oil, maple syrup, vanilla extract, and salt
Mix until a dough forms
Roll the dough out between two sheets of parchment paper until its about 1/4 inch thick
Use a round cookie cutter to cut out cookie shapes and place them on a baking sheet lined with parchment paper
Bake the cookies in the preheated oven for 10-12 minutes or until they are firm to the touch
Allow them to cool completely on a wire rack
While the cookies are cooling, prepare the filling
In a blender, combine soaked cashews, coconut cream, honey, and vanilla extract
Blend until smooth and creamy
Once the cookies are cool, spread a layer of the cashew cream filling on the bottom side of one cookie and sandwich it with another cookie, creating an Oreo
Repeat with the remaining cookies and filling
Place the assembled Healthy Chocolate Oreos in the refrigerator for at least 30 minutes to allow them to set
