Ingredients:

  • 3 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup hot water
  • 1/4 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1/2 cup powdered sugar for dusting
  • 8 ounces semisweet chocolate, chopped

Instructions:

Mix the gelatin with 1/2 cup cold water in a mixing bowl

To soften, let it sit for roughly ten minutes

Put the hot water, corn syrup, salt, and granulated sugar in a saucepan and heat over medium heat

Stir the mixture until it reaches 240F 115C on a candy thermometer, or until the sugar has dissolved

While continuously beating the gelatin mixture on low speed with an electric mixer, slowly pour the hot sugar syrup into it

After adding all of the syrup, turn up the mixers speed to high and beat until the mixture thickens and fluffs up, which should take ten to fifteen minutes

After adding the vanilla extract, beat for an extra minute to ensure everything is well combined

Press parchment paper into a 9 x 13-inch 23 x 33 cm baking dish and lightly dust it with powdered sugar

Using a spatula to smooth the top, pour the marshmallow mixture into the dish that has been prepared

Add a little more powdered sugar on top

Let the marshmallows sit overnight or for at least four hours at room temperature

After setting, take the marshmallows out of the dish and arrange them on a chopping board that has been sprinkled with powdered sugar

Cut the marshmallows into the sizes and forms that you want

For creative shapes, cookie cutters can be used

In a bowl that is safe to be placed in the microwave, melt the semisweet chocolate in 30-second increments, stirring after each to ensure smoothness

Let any extra chocolate to fall off after you dip each marshmallow into the melted chocolate

To set, place the dipped marshmallows on a baking sheet lined with parchment paper

Place the chocolate in the fridge or let it set at room temperature for approximately one hour

Your homemade marshmallows dipped in chocolate are ready to eat once the chocolate has hardened completely
