Ingredients:
- 1 box strawberry cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 cup fresh strawberries, diced
- 1/4 cup granulated sugar
- 1 package instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
Instructions:
Preheat oven to 350F 175C and prepare the strawberry cake mix according to package instructions
Bake the cake in a 9x13 inch pan as directed, then let it cool completely
In a bowl, mix diced strawberries with granulated sugar and set aside for 10 minutes to macerate
Using the end of a wooden spoon, poke holes all over the cooled cake
Prepare the vanilla pudding by whisking the instant pudding mix with cold milk until smooth
Pour over the cake, ensuring it fills the holes
In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form
Layer the Mason jars with crumbled strawberry cake, macerated strawberries, vanilla pudding-soaked cake, and whipped cream
Repeat the layers until the jars are filled, finishing with a dollop of whipped cream on top
Sprinkle graham cracker crumbs over the whipped cream layer for added crunch
Refrigerate the parfaits for at least 2 hours before serving
