The Poke Burrito combines the tastes of sushi with the ease of a burrito. Fresh tuna, creamy avocado, and crunchy cucumber are wrapped in seasoned rice and nori. Its a tasty fusion dish, topped with a spicy mayo and soy sauce mix
Ingredients:
- 2 cups sushi rice, cooked
- 1 pound sushi-grade tuna, diced
- 1 avocado, sliced
- 1 cucumber, julienned
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha optional
- 4 sheets nori seaweed sheets
- 1 tablespoon sesame seeds
- 1/4 cup mayonnaise
- 1 teaspoon wasabi paste
- 1 tablespoon pickled ginger, chopped
Instructions:
Put sushi rice, rice vinegar, sesame oil, and sesame seeds in a bowl
Put a nori sheet on a flat surface
Spread some seasoned rice out on the nori sheet, leaving a 1-inch edge at the top
Tuna, avocado, and cucumber should all be put in the middle of the rice
Seal the edge of the nori with water as you roll it up tight
If you want to use sriracha, mix soy sauce and it in a small bowl
In a different bowl, mix the mayonnaise and wasabi paste together
Cut the burrito into pieces that are 1 inch thick
Add the wasabi mayo and soy sauce mixture on top
Add pickled ginger as a garnish
Serve right away and enjoy
