Ingredients:
- 1 cup shredded carrots
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts
- 1 package instant vanilla pudding mix
- 2 cups cold milk
- 1 cup whipped cream
- 1 cup crushed graham crackers
Instructions:
Shred the carrots, crush the pineapple, and chop the walnuts
Put them all in a bowl
Mix instant vanilla pudding mix and cold milk together in a different bowl until the mixture is smooth
Set the pudding mix aside for a few minutes so that it gets thicker
Add the whipped cream to the pudding mix that has thickened
Spoonfuls of the carrot mixture, the pudding mixture, and crushed graham crackers should be added to the parfait glasses in a certain order
Repeat the layers until the glasses are full
Add a dollop of whipped cream on top to finish
Put the parfaits in the fridge for at least an hour before you serve them
If you want, you can add more chopped walnuts or shredded carrots as a garnish
