Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Red and green food coloring
Instructions:
In a large mixing bowl, cream the softened butter and sugar until light and fluffy
Add the vanilla extract and egg, mixing until well combined
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Divide the dough into two equal portions
In one portion, knead in red food coloring until the desired shade is achieved
In the other portion, knead in green food coloring until the desired shade is achieved
Cover both portions of dough with plastic wrap and refrigerate for at least 30 minutes
Roll out the red dough and green dough separately into rectangular shapes of the same size
Carefully place the green dough on top of the red dough
Starting from the longer side, tightly roll the two layers of dough together like a pinwheel
Wrap the dough log in plastic wrap and refrigerate for another 30 minutes
Preheat your oven to 350F 175C and line baking sheets with parchment paper
Slice the chilled dough log into 1/4-inch thick rounds and place them on the prepared baking sheets
Bake the cookies for 10-12 minutes or until the edges are lightly golden
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely
Once cooled, store the Christmas Pinwheel Sugar Cookies in an airtight container
