Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 cup cooked green lentils
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions:
Put cooked quinoa and green lentils in a large bowl and mix them together
