Ingredients:
- 10 cups popcorn, popped
- 1 cup mini marshmallows
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips optional
- 1/2 cup chopped nuts optional
Instructions:
In a large mixing bowl, combine the popped popcorn and mini marshmallows
In a saucepan, melt the butter over medium heat
Stir in the brown sugar and corn syrup
Cook until the mixture begins to boil
Remove from heat and stir in the vanilla extract
Pour the hot syrup over the popcorn mixture and stir until evenly coated
Press the mixture into a greased cake pan or mold, using a spatula or your hands to pack it firmly
Let it cool for about 30 minutes, or until set
If desired, melt chocolate chips and drizzle over the top of the cake
Sprinkle chopped nuts on top
Refrigerate for an hour before serving to fully set
