A comforting bisque made with parsnips and sweet potatoes, infused with aromatic spices. This gluten-free and dairy-free soup is perfect for a cozy meal.
Ingredients:
- 2 parsnips, peeled and chopped
- 2 sweet potatoes, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and garlic, saut until softened
Add parsnips and sweet potatoes, cook for 5 minutes
Pour in vegetable broth, add ground ginger, nutmeg, salt, and pepper
Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender
Using an immersion blender, blend the soup until smooth
Adjust seasoning if needed
