Ingredients:
- 110g almond flour
- 200g powdered sugar
- 20g cocoa powder
- 100g egg whites aged, at room temperature
- 50g granulated sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- Chocolate ganache for filling
Instructions:
Sift almond flour, powdered sugar, and cocoa powder together
Set aside
In a clean bowl, whip egg whites and salt until foamy
Gradually add granulated sugar while continuing to whip, until glossy stiff peaks form
Fold the dry ingredients into the egg white mixture until smooth and shiny
Add vanilla extract and continue folding until the batter reaches a lava-like consistency
Transfer the batter to a piping bag with a round tip
Pipe small rounds onto a baking sheet lined with parchment paper
Tap the baking sheet to release air bubbles, then let the macarons rest for 20-30 minutes
Preheat the oven to 300F 150C
Bake the macarons for 12-15 minutes
Let them cool completely on the baking sheet
Carefully remove macarons from the parchment paper
Pipe chocolate ganache onto the flat side of a macaron and sandwich with another macaron
Store in an airtight container in the refrigerator for 24 hours before serving to allow flavors to meld
Bring to room temperature before enjoying
